Apple pie

Here's how I spent my day today - peeling lots of apples. I made pies to give away today, but of course kept one for Bob! This is a good recipe and I thought I would share it.

Mom's Apple Pie
Combine: 1/3 cup sugar
1/3 cup brown sugar
3 tablespoons flour
1 teaspoon cinnamon
Press out any lumps. Ad 6 large tart apples, peeled and sliced. Toss well.
Place unbaked pie crust in 9 inch pie plate. Fill pastry shell with apple mix.
Topping: 1/2 cup sugar
3/4 cup flour
1/3 cup butter
Stir together sugar and flour, then cut in better until mixture is crumbly. Spread over filling.
Bake at 400 degrees for 30 minutes or until browned.
*This is our families favorite apple pie and we rate it a 9.

Yummy! I don't make anything with apple very often because I am allergic to the skin of apples. Is that the weirdest thing ever. If I eat an unpeeled apple my throat will start itching like cray. If I peel apples, esp. granny smiths, my hands will start to itch if I don't wash them immediately. The worst is if I even hold an apple and then touch my eyes I am running for eye drops. And it happens instantly to my eyes. I now have eye drops in my car, purse, bathroom, Mark's truck... 'cause I always forget to not touch my eyes.
It is crazy. But I can eat apples that are peeled without any issues so I still LOVE apple pie, warm, with ice cream. Oh man I am getting hungry.

Oh MAN! poor Jennifer! I never heard of anyone who was allergic to apples. Isn't that crazy? At least she can eat apple pie!

This recipe looks so yummy! However, I am allergic to the flour so I won't be making it. Isn't that crazy?

I love the smell of apples cooking so I may substitute corn starch for the flour and just have the apples without the pie crust. Sounds like a plan.
